Produced by fermenting Red Yeast (Monascus purpureus) with white rice, it is commonly used in cooking applications to enhance the color and flavor of foods. Peking Duck is an example of the coloration and flavor imparted by the Rice.It is carefully produced to avoid the presence of citrinin, an unwanted by-product of the fermentation process

What is it used for?
In Chinese medicine,it is used to lower cholesterol, improve blood circulation, and improve digestion. Red yeast rice contains chemicals that are similar to prescription statin medications. One of these, called monacolin K, has the same makeup as the drug lovastatin (Mevacor).

How long does it take for it to start lowering cholesterol?
In studies, patients started to see a reduction in cholesterol levels at about 12 weeks. However, in all the studies that showed it has helped lower cholesterol, all the products studied contained substantial amounts of monacolin K.
